![]() We love Mac and Cheese around here. In fact we love to throw cheese on just about everything, so I had to take one of our favorites and add another favorite to it - pesto. I am pretty bad at using increments when cooking so this is just a throw this and that in a pot of pasta. I like to use penne pasta when making the pesto mac and cheese. I cooked up a box of pasta - I tried really hard to like the whole grain pasta but it overpowers the flavors of anything you add to it so this is probably the one thing that I don't do whole grain. If you like the whole grain pasta, go for it. After draining the pasta I add about 2 tablespoons of butter and handful or two of shredded cheese, I used a mix of cheddar and mozzarella today. Next I added a big spoonful of pesto, some sun dried tomatoes, my mixed greens powder, and a few shakes of Real salt. Serve with some garlic toast for a yummy and immune boosting meal.
