My favorite sandwich ever is a Pesto Grilled Cheese. I crave these during the winter months and enjoy the fresh veggies in it during the summer. It is super simple and as with everything I make, anything you have on hand can be thrown in it.
Spread your pesto on some whole wheat bread. I then sprinkle some of my powdered veggies over the pesto. I used my garden green mix (combination of kale, chard and spinach) and sun dried tomato powder. I like to do a mixture of cheeses like mozzarella and cheddar. Top off with some garden veggies, today I had some tomatoes and of course zucchini, then throw on a top and grill.
I served my sandwich with a salad, some fried zucchini and lavender lemonade. In the winter I like it with a mug of Hot Chocolate or some hot herbal tea.
