If you have been following my blog at all you know how much I love raw honey and how much I love combining my herbs with raw honey to make a healing herbal honey. Ginger is a fun one because the flavors of the honey and ginger blend so well together. You can use your ginger honey for an instant tea (1Tbsp. per cup of warm water), spread on toast or bread, in your baking and cooking and as a sweetener for hot cereal or other herbal teas.
When making ginger honey you can use either powdered, shredded or chopped ginger. I use both, but for today I used some chopped fresh ginger. Fill your jar about 1/4 full of the fresh ginger (or 1/4 cup powdered per 1 cup honey) then pour in enough honey to fill the jar. Stir until well blended and keep in a warm, sunny spot for two weeks. If you don't have time to let it sit for two weeks you can bring a pan of water to a simmer and place your jar in for 30 minutes to an hour.
